We select a high marbled cattle from Australia that is grain fed for a minimum of 250 days, and dry aged for 24-30 days.
Its then cured over-night with a rosemary-salt, seared and slow roasted for about 3 hours, and further rested for another 1.5 - 2 hours.
The outcome.. deliciously tender, rendered yellow fatty chunks. Truly an experience to share with your friends and family.
